Broad-bean Pod Fritters

Fresh broad beans taste amazing, but they come in big non-edible looking pods that we usually throw away. We experimented with ways to make good use of them, and came up with this recipe. These fritters taste a bit like roasted peppers, and are good served with sweet chilli sauce.

Ingredients: Broad bean pods, 2 cups of flour, 1 cup soy milk, 1 tsp paprika, 2 tbsp cumin seeds, Salt and Pepper (to taste, use generously), Vegetable oil for frying, Sweet chilli sauce for dipping. 

Remove the beans from the pods and cut the pods into bite size pieces. Mix together all the other ingredients to make a batter. Dip the bean pods in the batter and shallow fry until crispy. Dip in sweet chilli sauce and eat.
