Sweetcorn Fritters

These little fried cakes make the most delicious starter, we served them at a dinner party last week where they went down a storm. These quantities make 15-20 fritters, enough for about 6 people, or 2 very greedy people. Dip in sweet chilli sauce or any other yummy dip you have around.

Ingredients: 200g self raising flour, 2 tablespoons soy flour, 2 tablespoons of water, 300ml soy milk, 1 can of sweetcorn, 6 spring onions (chopped), salt and pepper to taste, 1 tsp chilli powder, vegetable oil to fry.

Mix together all the ingredients and fry in about 2cm of hot oil. They take about 2 mins on each side, or until well browned and delicious smelling.

    If all bodies are beautiful then why not have a photo of a baby with it’s fat butt out eating a fritter…or perhaps a naked elderly gentleman sat with a fritter balanced on each knee? You could even opt for a sumo wannabe with fritters sandwiched between each flap! But no it had to be topless women. Give me strength. The only message you are giving out is that women will get their baps out to promote anything!

      We try to get a balance of all types of different bodies represented on this blog, if you have a look through the blog you’ll notice that we have a pretty good gender balance, including posts from trans-people and intersex people. As the blog was started and continues to be run mostly by a group of disabled, queer, young people, most of the posts are from us – we dont get tonnes of guest posts. The guest posts we do get do have a decent representation from older people.

      I’m sorry that our blog isnt as representative of different bodies as we would like (particularly older people, and people of colour) but it is something that we are working on.
