Sweet Potato, Butterbean and Avocado Salad

Jess made this salad. It’s yummy and a filling meal all on it’s own!

Ingredients: 3 small sweet potatoes (chopped into bitesize chunks), 2 avocados (peeled & sliced), 12 cherry tomatoes, 1 normal sized can of butterbeans (drained), 4 cloves garlic (crushed), 1 crumbly veg stock cube or 1-2 tsp bullion powder, 10 stems of tenderstem broccoli, 2 pitta breads, various leaves (we used a mixture of rocket, watercress and spinach), balsamic vinegar, olive oil, pepper and salt to taste.

Preheat the oven to 180’C. Place the sweet potato in the oven to roast for 15 mins, then add the cherry tomatoes for another 20 mins or so until the sweet potato is done. Meanwhile, fry the garlic with butterbeans  and the stock cube for 10 minutes. Boil some water to steam the tenderstem brocolli for 8 mins or so. Toast the pittas for a minute or so and cut into chunks. Combine the salad leaves with the sweet potatoes, butterbeans, broccoli, bread, avocado and cherry tomatoes. Add a drizzle of balsamic and salt and pepper just before serving and toss through.

    Just watching ‘My Daughter The Teenage Nudist’ and I think you’re all brilliant. Anyone leaving negative comments re ‘looks and weight’ need their eyes tested. You all seem to me to be bright, beautiful, attractive people of great integrity with an inspirational ideal. I’m a woman of 54, and while I don’t have any problems with nudity in it self, I do suffer (like many others) with a very poor body image, so am unlikely to every join in such activities. If what you’re doing helps only one person be more confident then you will have achieved a very worth while thing. Good luck and more power to you. By the way, the recipes look good too.

    Hi All. I’m a 53 year old(?) bloke, and I’ve just watched tour Ch4 show. Very Well Done.
    I used to go to the Eureka Naturist Club in Kent, had some good times there (No. Not that sort of “good time”). For the past few years, I’ve had some serious vegetarian leanings, but my Missus is a dyed in the wool omnivore, and as she is the “Chef” in the house, I’m omnivorous by default. Recently, our cat (Pan) died, but when May – the Missus – was cooking meat, guaranteed Pan would be on the ponce. Now He’s gone, May can’t bear to cook meat, so now we’re veggie by default. Sad about Pan, but happy for our health.
    Get this planet Body Positive.

    Saw you all on TV channel 4 last night and think you’re doing a great thing, real body positive. I’ve been a nudist for years and can’t get enough of nudity but it’s just not accepted enough in this country.
    Keep up with what your doing! Good cooks too.
